Garlic Chicken Mozzarella ...p58

Isn't it funny how sometimes the simplest combination of ingredients produces the tastiest results.  Just shows to go ya that quality has nothing to do with quantity.  That's how it is with this recipe.  Simple, but tasty.  And I just love the "prep time: 3 min."  Serve it over hot pasta - I used bow-tie pasta.

GARLIC CHICKEN MOZZARELLA

Prep Time: 3 minutes
Cook Time: 26 minutes
Servings: 4

4 boneless, skinless chicken breast halves
1 T olive oil
1 14.5-oz can Contadina recipe-ready diced tomatoes with roasted garlic
1 8-oz can tomato sauce
1/2 c. mozzarella cheese

Cook chicken in large skillet over medium high heat, 3 min. per side or until golden brown.  Drain.  Pour undrained tomatoes and tomato sauce over chicken, bring to a boil.
Reduce heat, cover and simmer 15 minutes or until chicken is done.  Sprinkle cheese over chicken, cover and cook 1 minute or until cheese is melted.  Serve over hot cooked pasta.
