Chicken Stroganoff ...p77

Pleasantly simple and absoLUtely delicious.  What more can I say?


Well, ok, for posterity's sake, 
I'll tell you Tricia's favorite 
mushroom joke.
This is for you, Trish!


A mushroom goes into a bar and sits down to order a drink. 
The bartender walks over and says, ''I'm sorry sir, but we don't serve your kind here.''

The mushroom sits back and asks ,''Why not? I'm such a fun guy (fungi)!"

CHICKEN STROGANOFF

1 chicken breast, salt & peppered
3 T butter
1/3 cup onion, chopped
1/4 lb. fresh mushrooms
3 1/2 T flour
1/4 tsp. thyme
1/4 tsp. salt
3 chicken bouillon cubes
1 2/3 cup boiling water
1/2 pint sour cream

Melt butter in frying pan, brown chicken on all sides.  Cover pan and simmer for 25 minutes.  Remove chicken and keep warm.  Add onions and mushrooms to pan drippings and saute until tender.  Remove pan from heat and blend in flour, thyme and salt.  Dissolve chicken cubes in boiling water, and add to flour mixture.  Cook, stirring constantly, until smoothly thickened.  Stir in sour cream and heat gently (do not allow to boil - this causes curdling).  Pour over chicken and serve with rice or noodles.
