Pepperoni Balls ...p18

Think deep-dish pizza crust here - an unexpected deep-fried twist to a baked pizza bite.  We made a meal out of them to accompany our salad, but they would make excellent appetizers as well, served with a side of marinara sauce or ranch dressing.  Fairly easy to make using the hot roll mix.

PEPPERONI BALLS

Yum!
1 pkg. hot roll mix
1/4 lb. Mozzarella cheese (cut in cubes)
1/4 - 1/2 lb. pepperoni, thinly sliced

Prepare roll mix according to package directions, but omitting egg and using 1 cup water.  Dough does not need to rise.  Place 1 cheese cub on 1 pepperoni slice.  Pinch off a piece of dough and shape carefully around cheese and pepperoni, forming a ball.  Fry in deep hot oil for about 5 min., or until golden brown, turning once.  Drain on paper towels and serve warm.
